Sweet Treats

Yields1 Serving
 1 cup rolled oats
 1 cup cashews
  cup coconut flakes
  cup almonds
 2 tbsp chia
  cup majool dates
  cup cranberries
  cup dark chocolate (chips or bar)
 3 tbsp pure maple syrup
 1 tsp vanilla extract
 1 tsp cinnamon

Blend oats and cashews until flour like.

Add Coconut and Almonds and blend until roughly chopped and included – just a couple of pulses

Add Chia, dates, cranberries, and chocolate and pulse until roughly incorporated.

Add maple syrup, vanilla extract, and cinnamon.

Blend until the mixture begins to come together and form a clump. You may need to add a table spoon of water if the mixture is very dry.

Dump out onto one half of a piece of parchment paper (make sure the paper is large enough to be folded over on to the dough).

Fold the parchment paper over the dough and use a rolling pin to flatten out the bars - the bars should be an even ⅛” or so.

Lift the bars on the parchment paper onto a cookie sheet and refrigerate or freeze for at least 20 minutes.

Cut bars to desired shape and size. Place in a sealed container and store in the fridge.
